sweet potato biscuits

makes 6 large biscuits

1 medium/large, peeled sweet potato, baked or steamed
3/4 cup soymilk + 1 tsp vinegar
2 cups flour
1 Tbsp baking powder
1 tsp salt
1/4 cup cold margarine

Preheat oven to 450. Mash the sweet potato and set aside. Mix the soymilk and vinegar and set aside. Mix together the dry ingredients in a large mixing bowl. Cut in the margarine until it becomes a coarse meal. Slowly stir in the soymilk mixture, then the sweet potato. Either divide the dough into 6 greased muffin tins, or pat/roll to 1″ thick and cut into 6 large biscuits. Bake for 10-13 min until golden brown.
