Laurie’s Bread

Laurie used to make this bread. I’m sure lots of other folks have as well, but it reminds me of her. Hardly any work, and you get this great, healthy, spongey, sourdough-y bread. You just have to wait.

Mix together:
3 cups flour (UltraGrain or White Whole Wheat)
1/4 tsp active dry yeast (not rapid rise)
2 1/4 tsp salt
1 1/2 c + 2 Tbsp warm water

Cover. Let sit overnight, or 12-18 hours. Mix in any additions at this point (Rosemary, garlic, olives, cinnamon butter and raisins, etc). Cover and let rise for 30 minutes. Turn oven to 450′. Place your glass baking pan in the oven while it is warming up. When bread is done rising, place in hot pan and bake covered for 30 minutes, then uncovered for 15 more minutes. Voila!
