pressed cabbage salad

1 head cabbage (red or white), sliced thin
1 red onion, sliced thin
3 carrots, grated or shaved
1/4 cup olive oil
1/4 cup lemon juice, lime juice or vinegar
1 tsp salt

Toss everything together in a big bowl. Put a plate on the top, and weights on the plate. Let sit for an hour or more. Drain the fluid. Serve. Yum.
