laugh it up, milletballs

These were going to be fried balls, but I got lazy and they turned into un-fried (yummy) squares.

1 cup millet
1 large beat, finely chopped (I used the food processor until pulverized)
1 box frozen chopped spinach
1 tsp salt
4 cups water
1/4 tsp ginger
1/2 tsp cinnamon
1/2 recipe easy thai chili sauce (from vegandad)

Toast millet in a dry pan for about 5 minutes, until nutty smelly.  Rinse in a fine seive (I have to use a coffee filter, so the millet doesn’t come out).  Put millet, water, beet and spinach in a pot, bring to a boil.  Reduce to simmer.  Simmer covered for 25 minutes.  Add remaining ingredients and simmer uncovered for about ten minutes, until liquid is absorbed.

The brilliant idea was that I was going to wait until the stuff was cool enough to handle, roll into balls and fry them.  But instead, I spread it in a pan to cool and can cut it into squares.
